I get asked about fat bombs a lot. Do I use them? Do I have a favorite recipe? Do you really need them? What are they really for??

One of the biggest items that most people struggle with on Keto – especially beginners- is meeting your fat macros.

Enter fat bombs!

Fat bombs are little pieces of heaven 😍 It’s my little source of extra fuel! I don’t use them all the time – but when I do… pure happiness!

It’s also perfect to curb your inevitable sweet tooth!

I love experimenting with different fat bomb recipes and a good friend of mine recently shared a strawberry one with me.  I started with that as a base and then expanded on it!

Below is my creation and all I can say is YUM.

These are definitely the BOMB. (Yeah, I went there…lol)

Mixed Berry Fat Bombs

The perfect fat bomb to curb for sweet tooth and meet those macros!

Ingredients

  • 5 Oz Cream cheese Softened/room temp
  • 2 Oz Butter Softened/room temp
  • 1/2 Cup Frozen mixed berries Defrosted/room temp
  • 2 Tbsp Swerve Granulated
  • 1 Tbsp Pure vanilla extract

Instructions

  1. Cut up butter and cream cheese into a bowl and let sit 30 minutes to 1 hour until room temperature.

     In a separate bowl,  mash mixed berries. Let sit until room temperature.  Add swerve and vanilla extract.  

    Add berry mixture to butter mixture and using a hand mixer- mix until well blended. 

    Spoon into mini dessert cups and freeze.

    Take out as needed for a sweet treat!

Keto Chocolate Mug Cake

Everybody could use a little bit of chocolate and this Keto Chocolate Mug Cake is perfect!

I use an amazing mug cake recipe which can be found here. It’s the perfect base for a great dessert!

I added a couple of crushed Lilly’s Chocolate pieces in the mix for a little added chocolate boost and I love to add a tablespoon of Collagen powder as well! I use this brand and LOVE it! And it’s unflavored so it’s a perfect addition to many foods and drinks – giving you that added benefit without that added taste!

Be sure to follow the directions and mix WELL. That is key!

And go for the homemade whipped cream… it’s super easy and tastes so good!

Ham & Cheese Calzone

My husband is Italian so we tend to have a steady rotation of pizza, pasta, stromboli and calzones in the dinner rotation. So I’m always trying different recipes so I’m able to enjoy the Italian foods that we love so much!

This is one of my favorites! Ham & Cheese Calzone.

Remember that fathead dough recipe I mentioned recently? It’s so versatile and PERFECT for stromboli and calzone!

Roll the dough a little thicker than normal and be sure to prick all over with a fork – then fill with your favorite fillings! Using the parchment paper, carefully fold over and crimp the edges!

I like to use a little melted butter on top to crisp it up!

Butter it up!

Bake in the oven at 425 for about 20 minutes or until your desired level of crispness.

Taco Cheesesteak Copycat Recipe

A stormy evening calls for takeout from our favorite Italian place in town 😍 I ordered my favorite Taco Cheesesteak – Minus the bun and tomatoes…add extra salsa. So filling and so good!

Since it’s Sunday… it’s also meal prep night.  And my takeout for dinner got me in the mood to be creative!

Voila! My own Taco Cheesesteak bowls!

Meal Prep

Super simple to make too! You just need a few items:

Steak-Um Sandwich Steaks

Shredded Lettuce (I used this!)

Nacho Cheese Sauce (I used this!)

Salsa (I used this!)

White onion (optional)

Prepare Sandwich steaks as directed on package, chop up in pan as cooking.  Add shredded lettuce to your meal prep container, top with cooked sandwich steak,  salsa, onion, and nacho cheddar sauce!

Like I said – SO easy!! Enjoy!!

Ingredients

  • 2 Steak Um Beef Sandwich Steaks
  • 1-2 Cups Shredded Lettucr
  • 1/4 Cup Nacho Cheese Sauce
  • 1/4 Cup Salsa
  • Few Slices White onion

Instructions

  1. Prepare sandwich steaks as directed on package. Chop steaks as cooking. Add shredded lettuce to meal prep container,  top with cooked sandwich steaks,  salsa,  onion,  and nacho cheese sauce!
