On Sundays when my family is not out and about going 20 different directions, we like to have a nice big family breakfast together.

Today was one of those Sundays.

Our youngest daughter, Rachel, is an an avid cook.  She loves experimenting with recipes with me.  Today she helped me out in the kitchen.

Eggs, Bacon, Sausage, Toast and my favorite Keto waffles!

I posted a few weeks ago about my love for Keto pancakes – see that post here . Believe it or not, you use the same exact pancake recipe that I referenced there for the waffles! Only addition is to add 1 tablespoon of melted butter! Mix well and then grab that waffle iron and have fun!

And P.S. – These freeze really well! So make a few extra for a quick breakfast during the week!

Fathead Cinnamon “Sugar” Donuts

Donuts

I had a crazy craving for donuts today. Stopped at Dunkin for my favorite unsweetened iced tea and the smell of donuts was overwhelming! Time to step up my recipe game!!

I know how versatile fathead dough is… so I decided to use that as a base for these donuts.

I started with the basics – shredded mozzarella cheese, almond flour, and cream cheese… then I added in ground cinnamon and Swerve.  Instead of an egg, I added ground flax seed and water.

Mixed everything together and separated into 6 balls. Shaped each ball into a donut shape and place in my air fryer (350°) for 6 minutes on one side and then 6 on the other.

While still warm,  I rolled each in a dish of Swerve and ground cinnamon.

SO good! As close to real sugared donuts as you can get!

Fathead Cinnamon "Sugar" Donuts

When you're craving donuts - a delicious alternative!

Ingredients

  • 1 3/4 Cup Mozzarella Cheese Shredded
  • 3/4 Cup Almond Flour/Meal
  • 2 Tbsp Cream Cheese
  • 2 Tsp Ground Cinnamon
  • 2 Tbsp Swerve
  • Extra Swerve & Ground Cinnamon For Coating
  • 1 Tbsp Ground Flax Seed
  • 2.5 Tbsp Water

Instructions

  1. Mix shredded mozzarella with Almond flour, Swerve and Ground Cinnamon. Add cream cheese.

    Heat in microwave for 1 minute.  Mix well. 

    Heat for an additional 30 seconds.  While heating, mix the ground flax seed and water together.  Add to mixture from microwave.  Mix well.

    Form dough into 6 donuts. Place on parchment paper in air fryer.  350° for 6 minutes on one side and 6 minutes on the other. 

    Mix extra Swerve and cinnamon for coating. 

    Remove donuts from air fryer and immediately coat with Swerve/ cinnamon mixture.

I get asked about fat bombs a lot. Do I use them? Do I have a favorite recipe? Do you really need them? What are they really for??

One of the biggest items that most people struggle with on Keto – especially beginners- is meeting your fat macros.

Enter fat bombs!

Fat bombs are little pieces of heaven 😍 It’s my little source of extra fuel! I don’t use them all the time – but when I do… pure happiness!

It’s also perfect to curb your inevitable sweet tooth!

I love experimenting with different fat bomb recipes and a good friend of mine recently shared a strawberry one with me.  I started with that as a base and then expanded on it!

Below is my creation and all I can say is YUM.

These are definitely the BOMB. (Yeah, I went there…lol)

Mixed Berry Fat Bombs

The perfect fat bomb to curb for sweet tooth and meet those macros!

Ingredients

  • 5 Oz Cream cheese Softened/room temp
  • 2 Oz Butter Softened/room temp
  • 1/2 Cup Frozen mixed berries Defrosted/room temp
  • 2 Tbsp Swerve Granulated
  • 1 Tbsp Pure vanilla extract

Instructions

  1. Cut up butter and cream cheese into a bowl and let sit 30 minutes to 1 hour until room temperature.

     In a separate bowl,  mash mixed berries. Let sit until room temperature.  Add swerve and vanilla extract.  

    Add berry mixture to butter mixture and using a hand mixer- mix until well blended. 

    Spoon into mini dessert cups and freeze.

    Take out as needed for a sweet treat!

On the Road Again…

Brussel Sprouts

This week has been crazy traveling for work.  Today was especially crazy as I traveled for a team recognition event.

Let me set the stage.  10 people at a table in a family style Italian restaurant.  Yikes.

The best part was when we sat down and two of my team members mentioned they had just started Keto! That set the tone for the entire luncheon! It was fun sitting with them and hearing about the beginning of their journeys, giving advice and inspiration.  It felt so good to help someone!

Despite the numerous pasta offerings – our group,  for the most part, kept our selections Keto. Fresh Mozzarella Salad, Brussel Sprouts with Pancetta, Chicken Limone, Spicy Shrimp and even 1/2 pound meatballs!

The food was amazing and surprisingly easy for me to stay on track – even with the massive bowl of pasta making its rounds at the other end of the table… and the fresh bread with olive oil… which in my “past life” was my huge weakness!

I even got to meet the Pope!

I stopped on the way home for a little Starbucks treat 😍 – Trenta Shaken Black Iced Tea with 2 Stevia/No liquid cane! One of my favorites!

A lot of people worry that they won’t be able to eat things they love while on this journey. Surprise! You can,  you’ll enjoy it and you still won’t feel deprived!
