On Sundays when my family is not out and about going 20 different directions, we like to have a nice big family breakfast together.
Today was one of those Sundays.
Our youngest daughter, Rachel, is an an avid cook. She loves experimenting with recipes with me. Today she helped me out in the kitchen.
Eggs, Bacon, Sausage, Toast and my favorite Keto waffles!
I posted a few weeks ago about my love for Keto pancakes – see that post here . Believe it or not, you use the same exact pancake recipe that I referenced there for the waffles! Only addition is to add 1 tablespoon of melted butter! Mix well and then grab that waffle iron and have fun!
And P.S. – These freeze really well! So make a few extra for a quick breakfast during the week!

After coming off a high from running 6.8 miles for the Ragnar Chase The Moon Challenge on Friday night to a TRX workout and another full workout yesterday…I felt amazing! During my post-workout stretching… yes, I said POST workout – I bent for a standing toe touch and POP. That distinctive POP that immediately makes you stop in your tracks because you just know what it means. The POP that crushes your soul after an amazing two days of workouts.
I came home and immediately elevated it with ice on/off the rest of the day. I’ve been here before with this type of injury… so patience is key. Problem is – I’m not a patient person.
I’m not a very good patient AT ALL. In fact, it’s KILLING me that I slept in today (8AM is sleeping in for me on gym days) because I needed to rest my leg. It’s killing me that I’m sitting here elevating and icing again this morning. It’s killing me that my leg feels really REALLY good this morning and it’s tricking my mind into thinking I’m ok.
So this morning I’ll rest and make myself relax. I’ll finish reading my favorite book that I’ve been putting off finishing because it’s THAT good…
I won’t promise that I’ll be like this all day. Chances are likely that I’ll do some form of upper body workout today – either here or at the gym.
This week has been crazy traveling for work. Today was especially crazy as I traveled for a team recognition event.
Let me set the stage. 10 people at a table in a family style Italian restaurant. Yikes.
The best part was when we sat down and two of my team members mentioned they had just started Keto! That set the tone for the entire luncheon! It was fun sitting with them and hearing about the beginning of their journeys, giving advice and inspiration. It felt so good to help someone!
Despite the numerous pasta offerings – our group, for the most part, kept our selections Keto. Fresh Mozzarella Salad, Brussel Sprouts with Pancetta, Chicken Limone, Spicy Shrimp and even 1/2 pound meatballs!
The food was amazing and surprisingly easy for me to stay on track – even with the massive bowl of pasta making its rounds at the other end of the table… and the fresh bread with olive oil… which in my “past life” was my huge weakness!
I stopped on the way home for a little Starbucks treat 😍 – Trenta Shaken Black Iced Tea with 2 Stevia/No liquid cane! One of my favorites!
A lot of people worry that they won’t be able to eat things they love while on this journey. Surprise! You can, you’ll enjoy it and you still won’t feel deprived!
